Anelli, Italian for “little rings”, are small, thin, rings of pasta. This dry, ring-shaped pasta is used in soups, salads, and oven-baked pasta dishes. Americans will often find Anelli in canned soups and mixed dishes, particularly popular with children. A popular pasta bake in Italy, called timballo, originates in Sicily and contains Anelli alongside meat and cheese. Anelli is a fun addition or substitute for recipes that call for alphabet pasta, pastina, or stellini (little stars). An even smaller version of Anelli, called anellini, is about one-fourth of the size of Anelli and can be used in similar dishes.
